Mini red velvet cupcakes

Almost anything mini is adorable in my opinion. Even baby versions of bugs. For Valentine’s Day I made these mini red velvet cupcakes. I adorned them with just a tiny pipe of frosting and teeny tiny hearts.

For the red velvet cake I used a mix from Sprinkles. When they first come out they taste just like the cupcakes I get from Sprinkles. However, once they cool, they seem to dry out fast. Perhaps I should remove them from the oven sooner next time.

For the frosting, I’m not a fan of cream cheese frosting. Instead I used mascarpone and whipped cream frosting.

Mascarpone whipped cream frosting

4 ounces mascarpone cheese
1/2 cup sugar
1 cup heavy whipping cream

Put all the ingredients into a medium bowl. Beat with mixer at high speed for a few minutes until mixture comes together (about 3 minutes) and thickens to a frosting texture.
