Have you ever had a sweet avocado smoothie? Called Sinh to Bo in Vietnamese, these drinks are quite common at Vietnamese restaurants, particularly Banh mi shops.
We had our first Sinh to Bo a few years back. When we saw it on the menu, we were intrigued but hesitant. We both loved avocados but had never eaten it in anything sweet. We’d heard of avocado smoothies being used in vegetable protein shakes, but never as a sweet shake.
The first taste was interesting. It’s a little confusing for the taste buds to encounter the buttery rich thick taste of avocado with sugar, but it works. It’s been one of our favorite drinks ever since.
Recently I thought I’d try my hand at making the drink myself rather then shell out $3-4 for someone else to make it for me. It’s quite easy. All you need is some ice, a fresh avocado, condensed milk or sugar, and a little milk to thin it out. Throw it all into a blender and give it a whirl.
The drink came out delicious and just as good as the ones we buy. I love how the smoothie has a naturally vibrant green color.
Avocado Smoothie (Sinh to Bo)
1 ripe avocado
1/2 cup milk
1 cup of ice
1/3 cup of sugar
2 tablespoons condensed milk
Open avocado and remove put and shell and put the flesh into a blender. Add in other ingredients. Blend for 1 minute until everything is smooth. Serve immediately.
