It’s been a while since I’ve had a chance to do a recipe post. It’s been a really busy start to the new year. I actually made these back during Christmas season baking, but they are perfect year round and especially perfect when you don’t have a lot of time and need a quick fix.
I’ve had several boxes of muffin mix sitting in my cupboard for a long time. Back from a time when I used to like making muffins from a box mix. But the scratch ones are so much better.
So I’ve been trying to figure out what to do with the muffin mixes. I decided to try playing around with trying to create a cookie with them, and cook them in the microwave. I found out that if you cook the muffin batter in the microwave, they form nice, moist, soft cakey cookies. Yum!
This is faster than waiting for them to bake in the oven. Instant gratification. And I like the texture more than when they bake up as muffins.
These are perfect for an individual dessert, or as a warm treat for your guests. They work as an on-the-go breakfast too.
- 1 box of muffin mix
- Follow instructions on box for mixing and making muffins. Take one ice cream scoop size amount of batter and place on piece of parchment paper. Place in microwave and cook for about 30 seconds. Check to see if cookie is cooked. If edges or top appears gooey, cook for about 5-10 more seconds. Let cool for a few minutes before eating. Repeat with remaining dough. Careful not to cook more than one at a time as it will overcook the other cookies, causing them to dry out after finished cooling.
