You know how people are always trying to find uses for all their zucchini? I need to befriend these people. Because I never had zucchini laying around.
I love zucchini bread. It may be my favorite type of quick bread. So when someone recently gifted me with zucchini, I was ecstatic.
Once it’s out of the oven, wait for it to cool. Once cooled, the bread can be easily sliced. Don’t try slicing before, or else the bread will likely crumble and you won’t have pretty slices.
You don’t really taste much zucchini in the bread, but you can see the hint of green specks. The zucchini makes this bread very light, fluffy and moist. My favorite part is the crunchy golden crust.
