You know how people are always trying to find uses for all their zucchini? I need to befriend these people. Because I never had zucchini laying around.
I love zucchini bread. It may be my favorite type of quick bread. So when someone recently gifted me with zucchini, I was ecstatic.
It only takes 5-10 minutes to mix all the ingredients in a mixer, and then you’re ready to pour it into a baking pan. The recipe makes 2 loaves.
DP loves sugar cookies. I make them often but sometimes I get bored and try to play around with flavors.
So I tried making these chocolate versions. They tasted pretty good but I wish I had smashed down the dough so that they spread more. I didn’t like how small and lumpy the cookies came out.
I tried using some brown sugar instead of just using granulated sugar for a chewier texture though it didn’t seem to make a noticeable difference.
Sugar cookies are super easy to whip up. Throw a few ingredients into the mixer.
Then shape the balls onto a cookie sheet and you are ready to go.

It’s been a while since I’ve had a chance to do a recipe post. It’s been a really busy start to the new year. I actually made these back during Christmas season baking, but they are perfect year round and especially perfect when you don’t have a lot of time and need a quick fix.
I’ve had several boxes of muffin mix sitting in my cupboard for a long time. Back from a time when I used to like making muffins from a box mix. But the scratch ones are so much better.
So I’ve been trying to figure out what to do with the muffin mixes. I decided to try playing around with trying to create a cookie with them, and cook them in the microwave. I found out that if you cook the muffin batter in the microwave, they form nice, moist, soft cakey cookies. Yum! Continue reading
